Quick Pickled Red Cabbage


The first time I made Jamie Oliver's Lamb Kofta Flatbreads I didn't make the red cabbage pickle.  Tonight, however, I have a red cabbage that I am slowly dismembering into various salads.

Serves 4

500g red cabbage
2 tbsp red wine vinegar
Salt & pepper

Thinly slice the cabbage, then scrunch together with the vinegar and salt in a bowl.  Leave as long as you can for the cabbage to soften - hours or just before you assemble the wraps.
