Air Fryer Sweet Potato & Halloumi Chips


Kids have taken to cooking frozen chips in the air fryer (and then covering them in cheddar and microwaving them).  Sweet potato is higher in fibre, beta carotene, and antitoxidants so I thought I'd try cooking them the same way, and in throwing some halloumi for good measure.

Serves 1 

350g sweet potato, peeled and cut into chips (I have a crinkle cutter!)
1/2 a pack of halloumi
1 tbsp extra virgin olive oil
1/4 tsp smoked paprika (optional) 
1/2 bag of watercress or rocket (optional)
Apple cider vinegar (optional)

Toss the sweet potato and halloumi chips in the olive oil and paprika in a pasta bowl.

Put the chips in an air fryer basket, leaving behind any excess oil.  Cook the chips for 10 minutes at 180C, give good shake, and cook for a further 10 minutes.

If serving with salad, pour a dribble of vinegar into the bowl with the excess oil,and toss the salad in it.

When ready, tip the chips onto the salad and tuck in.
