Leftover Tomato Sauce Soup

As quick as a cup-a-soup. And no, this soup is not made from ketchup.

I had about half a pot of creamy tomato pasta sauce left that I had made earlier in the week.  So today, with a considerable chill in the air and a need to clear the fridge out before going away for half term I made this into soup for Dad & I to warm us up whilst he worked from home and I packed.

Makes 2 mugs

250g tomato pasta sauce
250ml boiling water
1 chicken or vegetable stock cube
Fresh or dried thyme (optional)
Salt & Pepper

Heat everything apart from the salt and pepper in a small saucepan over a gentle heat.  Simmer for a couple of minutes.  Remove from eat and season to taste.
