Tandoori Salmon


Sprout asked we were next having Tandoori Chicken.  Big Boy is now a pescatarian. One quick google later, and we settled on Tandoori Salmon after finding a recipe on the Tesco Real Food website. The kids wolfed it down so we will definitely be repeating this simple dish.

Serves 6

4 salmon fillets, about 100g each
100g greek yoghurt
1-2 tbsp tandoori masala 
1 clove of garlic, peeled & crushed 
Juice of 1 small lemon

Mix all the ingredients into the yoghurt and spread onto the top of each salmon fillet and marinade for at least 30 minutes.

When ready to cook, place the salmon fillets onto a shallow baking tray and grill under a pre-heated grill on it's highest setting for 5-6 minutes until the yoghurt marinade begins to brown and the salmon is just cooked through.

Served with basmati rice and whole green beans with garlic butter.  

Notes: I made double the amount of marinade  (with 2 tbsp of tandoori masala) and heated the remaining 'sauce' in the microwave to spoon over the cooked salmon
