I'm not attempt Veganuary, but I am trying a 'Veek' - vegan week in the hope it will lower my blood pressure before I next see the GP. If it does, I will beeping our vegan days from 2 to 3 or more! .
Day 4 and this was my lunch. I made it as a salad with a vinaigrette, but it would work well with vegan mayonnaise as Tuna Mayo.
1 can no added salt chickpeas
1 small can no added salt sweetcorn
1 small onion, finely diced
1stick of celery finely diced
Salad dressing or vegan mayo
Drain the chickpeas and mash in a bowl with a fork. Add the rest of the ingredients and mix well.
