Cheap Smoked Salmon Carbonara Pasta Sauce


I'm feeling pretty exhausted with a bad cough that just gets worse at night, and spend the morning in bed trying to catch up on sleep, and the afternoon trying to catch up on what I should have done in the afternoon.

After a rummage in the freezer I decided upon smoked salmon Carbonara.  It sounds very glamorous, but using a £1 pack of salmon trimmings makes it very affordable.  The kids liked it too, almost licking out their bowls to get the smoked salmon morsels.

Serves 4

1 250g pack of smoked salmon trimmings
50ml double cream
1 small garlic clove, crushed
400g pasta

Cook the pasta according the instructions.  Mash up the salmon in one of the pasta bowls. When the pasta is cooked, drain and return to the pan.  Toss in a little olive oil then mix in the salmon, cream, and garlic.  Serve.
