Mushroom Chilli


I had a delicious Mushroom Chilli Tacos at Overdraft in Winchester recently, and thought I'd try to recreate it at home. 

Serves 4

2 tbsp olive oil
1 onion, peeled and thinly sliced
300g mushrooms, thinly sliced
3 garlic cloves, peeled and thinly sliced
1 tsp cumin
1 tsp ground coriander
1 tsp dried oregano
1 tsp smoked paprika
1-2 tsp chipotle paste (optional)
500g passata 
1 can black or pinto beans
Season to taste 

Fry the onion in the olive oil over a medium high heat, stirring regularly, until they start to develop a golden colour.

Add the mushrooms and continue to stir and fry until they stop looking raw.  

Stir in the garlic and the spices.  Once you can smell them cooking add the passata and beans, including the liquid in the can.

Simmer for 20 minutes, reducing the sauce as much as desired.  A thicker sauce works best in tacos and burritos, and a looser sauce works better for a chilli over rice.

Mexican Roast Potatoes & Beans


We seem to be alternating between pasta and rice for carbs recently, so I googled 'potato main meals' and turned up this Mexican Bean & Potato Bake.  It is a pretty versatile bake - the original recipe says to use kidney beans, but I was going to use pinto beans until I discovered I had leftover Chilli con Veggie.  You could also use Chilli con Carne if not vegetarian.  

Serves 4

1kg potatoes, cut into bite sized pieces
2 tbsp olive oil
1 pepper, cut into bite sized pieces (optional)
400g drained kidney, pinto, black beans, or leftover chilli
400 g tin chopped tomatoes
2 tsp smoked paprika (if not using using leftover chilli)
1 tsp ground cumin (if not using using leftover chilli)
1 tsp hot chilli powder (if not using using leftover chilli)
Salt & pepper
100g cheese, grated

Preheat the oven to 200C/190C Fan.

Toss the potatoes in the oil in a lasagne dish and roast for 45 minutes, stirring around half way through the roasting time, until lightly browned and nearly cooked through.

After 45 minutes, stir through the beans/chilli, tinned tomatoes, spices, salt and pepper. Sprinkle cover the cheese, and return to the oven for a further 30 minutes until bubbling hot, the potatoes are cooked through.

Birria Beef Tacos


My son came back from a meal with friends at a taco restaurant, raving about the Birria Tacos he had.  So I had to try to re-create it at home.  I based my recipe on BBC Good Food's Birria Tacos, without the range of chillies in their ingredients list, added pinto beans to stretch the meat a little further, and cooked in a slow cooker rather than the oven.

Serves 4

2 tbsp olive oil
1 kg braising steak cut into large bite sized pieces
400g tin chopped tomatoes
1 medium onion, peeled and roughly chopped
2 garlic cloves
½ tsp dried oregano
½ tsp ground cumin
½ tsp ground cinnamon
½ tsp ground ginger
1 tbsp chipotle hot sauce
1 tsp white wine vinegar
2 cloves
3 black peppercorns
A large pinch of salt
2 bay leaves
16 soft mini tortilla wraps

Topping ideas
Lettuce
Chopped coriander
Finely sliced onion
Grated mozzarella
Guacamole or avocado
JalapeƱos 
Refried beans or drained pinto beans, warmed
Fresh lime to squeeze over
Soured cream, useful to cool the chilli if you find it too much

Heat 1 tablespoon of oil in a large frying pan over a medium high heat.  If cooking in the oven, heat the oil in a lidded ovenproof casserole dish.

Dot the beef pieces around the pan, without overcrowding it, and brown on all sides.  You may have to brown the beef in several batches.  Once browned place in the warming slow cooker, or set aside if cooking in the oven. 

If cooking in the oven turn it on to heat to 140C/120C fan/gas 1.

Heat another tablespoon of oil in the pan and brown the onion.  Add the chopped tomatoes and garlic.  Heat to boiling, then turn off the heat and leave to cool enough to liquidise.

Liquidise the tomato mixture together with all the remaining ingredients apart from the bay leaves

If cooking in a slow cooker, pour the liquidised tomato sauce, add the bay leaves, and add recently boiled water to just cover the meat if required. Cook on High for 6-8 hours until the meat is tender and falling apart.

If cooking in the oven, return the beef to the casserole dish, add the bay leaves, and add 400ml recently boiled water to just cover the meat if required. Cover and cook in the oven for 3 hrs until the meat is tender and falling apart.  Check the beef every hour to ensure it is not drying out, and add recently boiled water to just cover the meat if required. 

When cooked, remove the meat with a slotted spoon and shred using two forks. 

To serve, put some shredded beef onto a mini wrap together with the toppings of your choice, and dip into a small cup of the sauce.  Do not build tacos in advance, as they will go soggy and fall apart.  For the same reason don't use larger tortilla wraps as I did - they fall apart before you get to the end of them!  But even with small wraps this is messy, but delicious.

Bean Quesadillas


Bean Quesadillas are a surprisingly simple but filling snack or lunch.

Serves 2 

2 wheat flour tortilla wraps
1 can black or pinto beans 
1 small onion, peeled and finely diced 
1 large clove garlic, peeled and crushed
1 tsp cumin
1tsp smoked paprika
2 tbsp olive oil
200g grated cheddar
Olive oil for frying

First make the refried beans. 

Heat 2 tbsp oil over a medium high heat in a frying pan.

Gently fry the onion until translucent (about 5 minutes).

Stir in the garlic and spices, then the beans and their liquid.

Bring the beans to the boil and simmer, stirring from time to time and mashing them with a potato masher or the back of a wooden spoon, until they are a double cream-like consistency.

Heat 1 tsp olive oil over a medium heat in a non stick frying pan large enough to fit one open tortilla.

Lay one tortilla into the frying pan and sprinkle 50g of cheddar on one half almost up to the edge.

Divide the beans into two portions in the pan and spoon one portion onto the cheddar cheese on the wrap in the frying pan. Sprinkle another 50g of cheddar on top of the beans, and fold the wrap in half covering the beans.  

Fry for 1-2 minutes until golden brown underneath, then carefully turn over and fry the other side for 1-2 minutes until golden brown.

Repeat with the other tortilla and remaining ingredients.

Serve with sour cream with a little chipotle sauce stirred through.

Hot Chocolate con Chilli


It may look like ordinary hot chocolate, but this simple Mexican inspired version packs a little punch!

Serves 1

1 mug whole or plant milk 
1 tbsp 100% cocoa powder
1/8th tsp ground cinnamon 
Large pinch of chilli powder to paste

Add the cocoa, cinnamon, and chilli to a mug together with enough milk to mix everything to the consistency of double cream.

Fill the mug with more milk, stirring in the cocos mixture.

Microwave for 2 minutes on high power. 

If you don’t have a microwave pour the contents of your mug into a small saucepan and heat gently, whilst stirring constantly to ensure it doesn’t catch on the bottom, until piping hot.  Pour back into the mug to drink.

Chilli Bean Salad


A very quick healthy canned bean salad, inspired by a reduced to clear pack of coriander.

Serves 2

340g tin of sweetcorn, drained
390g tin of black beans, drained
400g tin of kidney beans, drained
1 small onion, peeled and finely diced
1 tbsp extra virgin olive oil
Juice of 1/2 a large lemon
30g coriander, chopped
1 tsp ground cumin 
1/4 tsp chilli flakes
Salt & pepper 

Simply mix all the ingredients together.  Ideally this salad should be left for 20 minutes to overnight for the flavours develop.  But it is still great even if eaten straight after mixing.

I ate mine as lunch with nothing else.  It is surprisingly filling, thanks to all the fibre.  But you could add 200g cooked pearl barley to bulk it out for a more filling lunch.

Chilli Bean Wholegrain Salad


On a cool damp spring day a chilli is definitely called for, rather than a salad.  But I'm not cooking a chilli for lunch, so have just added many of the raw Chilli con Veggie ingredients to some warmed up grains.

Serves 2 as a light lunch

200g cooked pearl barley, quinoa, or brown rice
1 can black beans, drained 
1 pointed red pepper, diced
2 fat spring onions, sliced (or half a small red onion)
1 tbsp chopped picked jalapeƱos 
1 garlic clove, peeled and crushed
1 tsp cumin
1 tsp dried oregano (optional)
2 tbsp mixed seeds (optional)
2 tbsp extra virgin olive oil
1 tbsp red wine vinegar
A sprinkle of chopped fresh parsley or coriander (optional)

Dice all your ingredients whilst your grains are cooking, if you do not have any pre-cooked (I have begun batch cooking grains at weeks and freezing it in single portions for such an eventuality).  Diced tomato and avocado could be added if you have any to hand.

Stir everything into the warm grains, season to taste, and tuck in.

Fish Finger Tacos




Fun family finger food.  You could do this with fish fillets, but don't think the kids would have eaten so many.

Serves 4

8 mini tortilla or 4 large tortilla wraps
8 fish fingers 
1 onion, thinly sliced
2 tbsp white wine or apple cider vinegar
1/4 tsp salt
4 gherkins, finely chopped
2 tbsp capers
4 tbsp soured cream or mayonnaise
4 handfuls shredded lettuce
Optional - sliced tomato, jalapeƱos, guacamole

Scrunch the sliced onions together with the vinegar, sugar, and salt and leave to one side.

Stir gherkins and capers into the soured cream or mayonnaise.

Fry, grill, or air fry the fish fingers. 

Prepare tortillas, sharing out the lettuce, pickled onions, and tartare sauce along the middle, and lay 1-2 fish fingers on top of this when cooked.  

Serve two mini tortillas or 1 large tortilla per person.

Mexican or Italian Bean Salad


Slowly moving into salad season, so I thought I'd experiment with a bean salad.

Serves 2

1 can beans in water, drained  (black beans, pinto beans, kidney beans)
1/4 cucumber, cubed 
1 beef tomato, diced 
1 red pepper, diced 
1 stick celery, diced 
1 small red onion, peeled & diced

Mexican dressing - small pack of coriander finely chopped, 1/2 tsp ground cumin, 1 small green chilli pepper finely diced, 2 tbsp extra virgin olive oil,1 tbsp red wine vinegar, freshly ground pepper & salt

Italian dressing - 2 tbsp finely chopped broad leaf parsely, 2 tbsp extra virgin olive oil,1 tbsp red wine vinegar, freshly ground pepper & salt

Mix all the ingredients together with the dressing of your choice. Leave to marinade for 30 minutes if you can.  

Spoon into mini pittas to eat.

Homemade Tomato Salsa & Cheesy Nachos


I reserved some soft (but not mouldy) cherry tomatoes to add healthy element to my son's cheesy nachos.

200g ripe tomatoes
1 small onion or shallot
1 clove of garlic
1 tbsp olive oil
1 tsp red wine vinegar
1 tsp ground cumin
Pinch of extra hot chilli flakes
Pinch of salt

4 handfuls Tortilla crips
2 handfuls grated cheddar


Chop the tomatoes if larger than cherry tomatoes, and blitz all ingredients in a food processor.  Leave for flavours to develop if can.

Divide the tortilla crisps into two microwaveable bowls. Sprinkle a handful of grated cheese over each bowl. Microwave each bowl for 30 seconds, and then 10 second bursts if the cheese is not melted.

Also served with Guacamole in the photo.

Mexican Refried Beans


Refried beans may not look pretty, but they are tasty, filling, quick, and cheap.

Serves 4 as a side or filler

2 cans pinto or black beans
1 onion, peeled and finely diced
1 large garlic clove, peeled and finely chopped
1 tsp ground cumin
1 tsp smoked paprika
2 tbsp olive oil
Salt to taste
Lime or lemon wedges to serve

Drain the beans, reserving the liquid.

Heat the oil in a large frying pan and fry the onion gently until translucent (about 5 minutes). Add the garlic and cumin and stir around until you can smell them. Add the rest of the ingredients, and roughly mash the beans with a potato masher. Turn the heat up to medium to fry the beans and heat through. 

Stir the beans from time to time. If they start to stick before heated through add a little of the cooking liquid. You will end up with a stiff brown (tasty) paste.

Serve as a part of the filing for fajitas or burritos, or with a fried egg on top as a Mexican breakfast.  I have been know to add vegetable stock to leftovers to make a soup!

Leftover Roast (Pork, Turkey, Chicken, Nut Roast) Fajitas


Wraps are a big favourite in our family, and fajitas turned out to be a handy way to use up our leftover roast pork from Christmas Day.  Big Boy is now vegetarian, and had his with reheated nutroast crumbled in, although I did have a back up can of black beans as a Plan B vegetarian option.

Serves  4

Large onion, peeled and thinly sliced
Red pepper, deseeded and cut into strips
1 garlic clove, peeled and crushed
1/2 tsp cumin seeds
1/2 tsp smoked paprika
1/2 tsp chilli
1 tbsp sunflower oil
1 lime or lemon, juiced

8 wraps
Lettuce leaves, washed & torn
One small handful of roast per person
Sour cream or Greek Yoghurt (optional)
2 avocados, destoned & sliced
Fresh chilli, deseed and thinly sliced (optional)

Fry the onion and red pepper over a gently heat until both are soft and slightly brown.  Add the garlic, spices, lime juice, and leftover roast and fry to reheat the roast.

When ready, assemble your fajita as desired.

Mexican Bean & Tomato Salad or Salsa


I manage to grow one or two scraggly coriander plants a year.  This time I decided to use my meagre harvest in a Mexican style bean salad/salsa.

Serves 4

1/2 medium onion, finely diced
1 clove of garlic, peeled and finely grated
1 small red chilli, deseeded and finely chopped
1 small bag of coriander, finely chopped
2 large vine tomatoes, diced
1 tin black or pinto beans
2 tbsp olive oil
1 tbsp lime or lemon juice
Salt & pepper

Mix all the ingredients together and leave to stand for 10-20 minutes if possible for the flavours to mingle.

We mixed half this salad with 2 mugs of cooked brown rice to make a salad, and have kept half back to have as a salad with several other vegetable dishes another day.
