Rebujito, Andalusian Sherry Cocktail


Two girlfrien's and I recently enjoyed a food & drink packed day trip to Alicante (06.55 flight out, 21.40 flight back) for one friend's 60th birthday.  Between the three of us we drank Sangria, beer, Tinto de Verano (red wine with lemonade), Mojito, Cava, Manzanilla and Fino Sherry.  In the last bar I noticed several Sherry Spritz after I had ordered, so took a photo of the drinks menu and vowed to try at least one at home.

Tonight, on a balmy summer's evening (8pm, and still 22C outside), I have made a Rebujito.  A very simple sherry cocktail. Not technically a Spritz as there is no Prosecco (or Cava).  If you feel so inclined, you could add 60ml of Prosecco and 60ml of 7Up to the sherry.

Serves 1

60ml fino sherry (I used Cream Sherry, hence the caramel colour)
120ml 7Up or Sprite (you want a lemon & lime flavour)
A sprig of mint
A wedge of lemon or lime
Ice

Fill the glass with ice, then add the other ingredients. Mix gently and enjoy.

Rhubarb Cordial


My rhubarb at the allotment this year is plentiful.  And as I only made one batch of Elderflower Cordial this year, I thought I'd make Rhubarb Cordial to add to a Midsummer's Day Prosecco. Recipe is from BBC Good Food

Makes approx 600ml

450g rhubarb, rinsed and chopped
300g sugar
300ml water
Zest & juice of 1 lemon
Zest & juice of 1 orange
A slice of root ginger

Bring the water and sugar syrup to the boil.  Add the rest of the ingredients and bring back to the boil.  

Cover and turn down to a simmer.  Cook until the rhubarb has turned to mush.

Strain through a fine sieve, keeping the rhubarb pulp (Congratulations, you have made rhubarb compote too.  Save this for Rhubarb Ice Cream or Rhubarb Fool).

Store in sterilised bottles in the fridge for up to a month.  

Add around 25ml (just under 2 tbsp) to 100ml of sparkling water or Prosecco

Swedish Cardamon Buns


Just like Cinnamon Buns, but with ground cardamon. Surprisingly easy, even the plaiting.

I've taken the Richard Bertinet's Cinnamon Bun recipe I first used a couple of months ago, and halved the quantity so it made 12.

Makes 12 buns

For The Dough;
100g Full Fat Milk
1 Medium Eggs
300g Strong White Bread Flour
6g dried quick yeast
25g Caster Sugars
100g Salted Butter (at room temperature)

For The Filling;
75g Salted Butter (at room temperature)
125g Soft Brown Sugar
1 tsp ground cardamon or crushed seeds from 35 cardamon pods

For The Egg Glaze;
1 Egg

Start by making the dough. Put the milk and eggs into the bowl of a food mixer (I used a bread machine on dough cycle instead), add the flour, then the yeast to one side of the bowl, and the salt and sugar and butter to the other side of the bowl

Mix on a slow speed for 4 minutes then increase the speed to medium and mix for a further 10-12 minutes until the dough comes away cleanly from the side of the bowl. Or just leave the dough cycle on your bread machine to run. Mine is 45 minutes long, including proving time.

If using a food mixer, form the dough into a ball and pop into a clean floured bowl. Cover and leave for around 45 minutes or until doubled in size.

For the filling, beat the butter and sugar together until pale and stir in the cardamon. Spread the filling over the top of the dough (if softening the butter in the microwave, take care not to let it melt too much - mine was a little sloppy to work with and oozed out of my rolls when twisting).

Roll out the pastry to a rectangle roughly 35 x 45cm, with the longer edge facing you. Spread the cardamom butter over the surface, right to the edges. Fold the top third down to the middle and the bottom third up, like an envelope, so you have three layers of dough. Score, then cut into 12 equal strips, measuring about 3.5 x 11cm each. 

If you're able to plait, make 3 cuts down strips leaving 1 cm uncut at the top. Take each plait and roll it up along its length starting from the cut end then place, uncut end down, in a greased 12 cup muffin tray. I used silicone muffin cases to save greasing. If you can't plait, cut each strip into 2 and twist instead of plait. Cover and allow to prove for 1 hour.

Preheat the oven to 200°C. Brush the knots with the egg glaze and sprinkle with a little brown sugar. Bake for 15-20 minutes until golden.

Quick Norwegian Pickled Cucumber Salad


This cucumber salad is so quick and easy to make, and takes me back to my expat teens in Norway.

Serves 4 as a side

1 large cucumber
1 tsp salt
1 tsp sugar
2 tbsp apple cider vinegar
1 tsp chopped dill fronds (optional)

Finely slice the cucumber and stir in the other ingredients. It is ready to eat immediately, but improves with standing.

This is a light, refreshing salad that goes well with 'fatty' foods like roasted salmon or Swedish meatballs.

Potato & Beetroot Salad


A Scandinavian Midsummer Dinner Party has given me the opportunity to experiment with some Scandinavian dishes. The addition of beetroot seems to move this potato salad away from being Scandinavia to being a 'Russian Salad', but the resulting dish is a fabulous colour.

Serves 4 as a side

500g salad potatoes
500g beetroot
4 large gherkins, diced
1 small red onion, peeled and thinly sliced
2 heaped dessertspoons soured cream
2 heaped dessertspoons mayonnaise
Pepper & salt to season

Boil trim the leaves off the beetroot leaving a short stalk and boil until tender (approximately 40 minutes for medium sized beetroot). Drain and leave until cool enough to handle. You could use cooked beetroot, but I personally feel freshly cooked beetroot has a better flavour. 

Boil the potatoes whole until just cooked (15-20 minutes depending on size). Drain and leave to cool.

When the beetroot are cool enough to handle, push/scrape the skin and stalks off and dice the beetroot.

Cut the cooled potatoes to the same size as the beetroot.

Mix all the ingredients in a large mixing bowl and season to taste.  I added a couple of spoonfuls of the gherkin brine to loosen the mixture a little.
