When my own tomatoes ripen I love to just make a simple salad with them and enjoy their tomatoeyness!
We must have first had this salad when we were living in Italy in 1970s as Insalata di Pomodoro e Aglio is one of the first things I remember being able to order. And my Dad has continue to make this as summer treat ever since.
If you have ripe, flavoursome tomatoes try this...Slice the tomatoes chunkily, place in a bowl with a pinch of salt, a very small clove of crushed garlic, a drizzle of olive oil, and a tiny splash of red wine vinegar (about 1/2 tsp!). Stir and leave for about half an hour if you can for the salt to draw the juices out of the tomatoes and all the flavours to mix together.
