Greek Salad


My 10 year old son discovered Greek Salad in the spring, so we have taught him how to make it.  He gets very excited when I tell him there's feta in the fridge.

We were lucky enough to make it from homegrown tomatoes and cucumbers this summer.

Serves 4 as a side

200g feta, cubed
2 large beef tomatoes, roughly chopped
1/2 a large cucumber (or a small homegrown one), halved lengthways & sliced
1/2 a red or white onion, thinly sliced
20 black olives
1 tbsp extra virgin olive oil
1/2 tsp red wine vinegar
1 tbsp oregano
Large pinch of sea salt
Freshly ground black pepper

Simply mix all the ingredients together, and leave as long as you can to allow the flavours to mingle.  We managed 10 minutes whilst I insisted my son empty the dishwasher.
