Been meaning to try this for ages. Just took a while in lockdown to get a second tin of jackfruit, and I forgot to get burger buns in our weekly online delivery so we had it in wraps. The kids loved it.
Serves 6
1 tbsp sunflower oil
2 tins jackfruit in water
2 garlic cloves, crushed or finely grated
2 tsp ground cumin
1 tsp smoked paprika
480g bbq sauce
Put the sunflower oil into a frying pan. Drain the jackfruit and shred the lump with your fingers into the frying pan.
Fry the jackfruit over a medium heat, stirring frequently. Once it starts to sizzle, and the rest of the ingredients apart from the bbq sauce.
Fry for a couple of minutes then add the bbq sauce. Heat thoroughly then serve in a bun, in a wrap or just a salad.
