Christmas sees me with a surfeit of dairy products (out of date double cream, soft cheese, greek yoghurt), so we have settled on a creamy seafood pasta sauce.
Serves 4
150ml double cream
200g full fat soft cheese
50g parmesan cheese, grated
1 large clove of garlic, peeled & crushed
1tbsp olive oil
2x frozen seafood selection packs, thawed
Parsley (optional)
Chilli flakes
(optional)
(optional)
Gently fry the garlic in the olive oil over a medium heat. After a few minutes add the cream and soft cheese and stir well. Add the seafood and continue to heat gently, stirring regularly, until the seafood is thoroughly thawed and the sauce is gently bubbling. Stir in the parmesan and season.
Stir through cooked pasta, and sprinkle with chopped parsley and chilli flakes if desired.
