Roasting pumpkin seeds is such an easy and healthy thing to do.
Simply save your seeds from pumpkin, rinse off as much of the stringy flesh as you can then toss in about 1 tsp vegetable oil, 1/2 tsp smoked paprika, and a good pinch of salt.
Place in a small shallow dish and roast at 180-200C for about 40 minutes.
As it is a little extravagant to turn the oven on just for this, I squeeze these into the oven whilst baking something else like bread or a roast.
