Fun family finger food. You could do this with fish fillets, but don't think the kids would have eaten so many.
Serves 4
8 mini tortilla
12 fish fingers
1 onion, thinly sliced
4 tbsp white wine vinegar
2 tsp sugar
1/4 tsp salt
4 gherkins, finely chopped
2 tbsp capers
4 tbsp soured cream or mayonnaise
4 handfuls shredded lettuce
Optional - sliced tomato, jalapeños, guacamole
Scrunch the sliced onions together with the vinegar, sugar, and salt and leave to one side.
Stir gherkins and capers into the soured cream or mayonnaise.
Fry or grill the fish fingers. Prepare tortillas, sharing out the lettuce, pickled onions, and tartare sauce along the middle, and lay 1.5 fish fingers on top of this when cooked. Serve two per person.
