My little Phillips Air Fryer is perfect for a hearty portions of vegetables for one, or a side for two. Although, as I air fried/roasted a lot of vegetables for the week ahead, it probably would have been more economical to turn the oven on.
Serves 1-2
1 large beetroot or 2 small
Extra virgin olive oil
Salt & pepper
Peel the beetroot and roughly chop into 2cm cubes. Toss in a drizzle of olive oil, a pinch of salt, and some fresh ground pepper.
Lay out in a single layer in the air fryer and cook at 200C for 10 minutes. Shake/turn and cook for a further 10 minutes.
I cooked mine on a silicone liner with possibly too much oil. They were foaming alarmingly when I took them out. I think they were both steaming and frying at the same time, but they still tasted great.
