Pistachio & Honey Ice Cream


A Middle Eastern inspired pudding to finish our vegetarian gluten free meals with friends last weekend.

300ml double cream
50g finely crushed shelled pistachio nuts
4 tbsp runny honey
2 tbsp granulated sugar

Mix all ingredients in an ice cream maker.  If you have the time freeze after making, but this is very nice as a mousse like consistency if you don't have time.
