Bored of sandwich, and finding some mushrooms in the fridge that needed eating,I thought I'd make a quick filling version of a Tom Yum Soup.
Serves a greedy 1
50g mushrooms, thinly sliced
1 tsp red curry paste
1 nest of rice noodles
1 stock cube
1 tsp red curry paste
1 nest of rice noodles
1 stock cube
Juice of 1/2 a lime
1 tsp fish sauce
Chopped coriander (optional)
Cook everything, apart from the coriander, together in a lidded pan for as long as the noodles need cooking. Once cooked serve and sprinkle with coriander before tucking in.
