Whipped feta is oh so simple, and a great quick dip.
Not sure how/why I stumbled across whipped feta, but it makes a great quick dip with a choice of several flavours. I didn't add anything more than garlic to mine today though, as I was using it as a cheesy white sauce for a Greek Courgette Lasagne.
200g feta, drained and broken up
4 tbsp greek yoghurt
4 tbsp greek yoghurt
1 tbsp extra virgin olive oil
1 garlic clove, peeled and crushed
1 tbsp chopped fresh basil or chives (optional)
½ tsp smoked paprika, plus extra to serve (optional)
Blend all ingredients until smooth in a mini food processor. Serve with toasted pitta.
