This Tomato & Green Pepper Salad is lovely and refreshing, made in a matter of minutes but is all the better for being left for a few hours for the flavours to develop.
Serve 4 as a side
1 large ripe beef tomato, cut into 1cm pieces
1 green pepper, deseeded and cut into 1cm pieces
1 green pepper, deseeded and cut into 1cm pieces
1/2 a sweet onion, thinly sliced
1 tbsp extra virgin olive oil
Juice of 1/2 a lemon (optional)
Large pinch of salt
Mix all the ingredients together and leave for a few hours for the flavours to develop if you can.
The lemon juice was a mistake as my eyes flitted to the Moroccan Tomato & Green Pepper Salad above in my pdf of Mediterranean recipes to try, but it possibly made the salad more refreshing.
